Homemade Mashed Potato Peppermint Patties

Homemade Peppermint Patties
  • 1 cup leftover mashed potatoes (we recommend Idahoan Original or Buttery Homestyle)
  • 2 Tbsp melted butter
  • 2 tsp peppermint extract
  • 10 cups powdered sugar
  • 12 oz semi-sweet chocolate chips
  • 1 Tbsp vegetable oil
  1. In a bowl, combine the first 4 ingredients and mix well. You may need to add more sugar if your mixture is too runny--it should feel like a dough.
  2. Scoop teaspoonfuls of the dough and shape into patties. Cover with plastic wrap and chill for a few hours.
  3. Melt the chocolates with the oil and dip the chilled patties, covering completely. Chill until set.
    Note: These have a LOT of sugar, but this recipe makes a large batch of small candies.
