Ingredients
  • 2 cups rehydrated Idahoan® Hash Browns
  • 2 eggs
  • 1⁄2 cup onion, chopped
  • 1⁄2 cup red pepper, chopped
  • 1 tsp each salt & pepper
  • Sour cream & salsa*

Instructions
  1. Mix eggs with hash browns.
  2. Stir in veggies and seasonings.
  3. Spray or brush oil on your waffle iron and heat up.
  4. Pour enough batter to cover the lower cooking surface. Close lid and cook per manufacturer’s instructions until golden brown.
  5. Serve hot with sour cream and salsa.
