As you might imagine, the holidays are one of our favorite times of year as mashed potatoes are an essential part of many celebratory menus. Some might even consider them mandatory. And while we like our mashed potatoes the traditional way with gravy, it’s also the season for a little extra decadence.
Enter Aligot (pronounced “ah-lee-go”) mashed potatoes. This French dish is a dreamy combination of potatoes and cheese traditionally served on special occasions. While usually made with the local cheeses of the Midi-Pyrénées region, we’ve adapted our version to include easy-to-find cream cheese, mozzarella and white cheddar. Starting with a package of Idahoan Buttery Homestyle mashed potatoes gives you a head start, getting all the hard work out of the way.
These mashed potatoes are as showy as they are delicious. The silky, stretchy texture is sure to strike up a chorus of “ooh’s” and “ahh’s”. Make sure you serve them up hot as they lose some of this stringy magic as they cool.
