While there’s a lot of meals during the holiday season that we spend extra time on, there’s still a lot that we need to squeeze in between our regularly scheduled activities, whether that be meetings or sports practice; homework or housework. And this on top of all the extra holiday activities vying for your time such as shopping, addressing cards and wrapping presents. Sometimes dinner gets pushed lower and lower on the priority list. Well, until your hungry family reminds you otherwise.
We teamed up with blogger Dorothy Reinhold of Shockingly Delicious and she created this recipe for Roasted Garlic and Parmesan Potato Soup with Peppers, Carrots and Pesto. It comes together in less than a half hour but is elevated with the addition of some bright-colored veggies and a dollop of store-bought pesto. Add a tossed salad and some crusty baguette and you have a complete, fast dinner that still feels special in the middle of the busy season.
