Sweet Potato Waffles with Cinnamon Apple & Nectarine Topping
Serves: 4 large waffles, or 10-12 mini waffles
- 1 cup all-purpose flour
- 1 Tbsp baking powder
- ¼ tsp salt
- 3 eggs
- ¾ cup 2% milk
- 1 pouch Honest Earth® Sweet Potatoes
- 2 Tbsp vegetable oil
- 1 Tbsp butter
- 1 large tart green apple, peeled and thinly sliced
- 1 firm but ripe, nectarine (or peach), thinly sliced
- 2 Tbsp brown sugar
- 2-3 Tbsp maple syrup
- ½ tsp cinnamon
- In a medium bowl whisk together the flour, baking powder and salt.
- In another bowl add the egg yolks (saving the whites), the milk, sweet potatoes and oil. Blend together.
- Add the flour mixture to the egg and milk mixture and blend together until no clumps remain.
- Whip the reserved egg whites in a separate bowl until stiff peaks form and gently blend into batter.
- Preheat waffle iron to medium. With a pastry brush, oil the waffle iron and add the batter. Cook until waffle removes easily.
- In a medium skillet, heat butter over medium-high heat.
- Add apple and nectarine; cook and stir 2 minutes.
- Stir in brown sugar, maple syrup and cinnamon.
- Cook and stir 1 minute longer. Add more maple syrup if desired. Remove from heat and keep warm.
