Sweet Potato Waffles with Cinnamon Apple & Nectarine Topping

Give your weekend waffles a little nutritional boost plus natural sweetness with the addition of sweet potatoes. We’ve topped our version here with green apples and nectarines but feel free to experiment with other fruits like pears, plums, other varieties of apples and peaches.

Sweet Potato Waffles with Cinnamon Apple & Nectarine Topping
Serves: 4 large waffles, or 10-12 mini waffles
 
Ingredients
  • 1 cup all-purpose flour
  • 1 Tbsp baking powder
  • ¼ tsp salt
  • 3 eggs
  • ¾ cup 2% milk
  • 1 pouch Honest Earth® Sweet Potatoes
  • 2 Tbsp vegetable oil
Cinnamon Apple Nectarine Topping
  • 1 Tbsp butter
  • 1 large tart green apple, peeled and thinly sliced
  • 1 firm but ripe, nectarine (or peach), thinly sliced
  • 2 Tbsp brown sugar
  • 2-3 Tbsp maple syrup
  • ½ tsp cinnamon
Instructions
  1. In a medium bowl whisk together the flour, baking powder and salt.
  2. In another bowl add the egg yolks (saving the whites), the milk, sweet potatoes and oil. Blend together.
  3. Add the flour mixture to the egg and milk mixture and blend together until no clumps remain.
  4. Whip the reserved egg whites in a separate bowl until stiff peaks form and gently blend into batter.
  5. Preheat waffle iron to medium. With a pastry brush, oil the waffle iron and add the batter. Cook until waffle removes easily.
Cinnamon Apple Nectarine Topping
  1. In a medium skillet, heat butter over medium-high heat.
  2. Add apple and nectarine; cook and stir 2 minutes.
  3. Stir in brown sugar, maple syrup and cinnamon.
  4. Cook and stir 1 minute longer. Add more maple syrup if desired. Remove from heat and keep warm.
