This sweet potato bread is loaded with all the flavors of fall – nutmeg, cinnamon and allspice. Toast it and spread with a little cream cheese for an extra decadent treat.
Sweet Potato Bread
Serves: One loaf or two mini loaves
Ingredients
- 1 pouch Honest Earth Sweet Potatoes
- ½ cup granulated sugar
- ¼ cup vegetable oil
- 1 egg, beaten
- 1 cup all-purpose flour
- ½ teaspoon baking soda
- ⅛ teaspoon baking powder
- ½ teaspoon salt
- ¼ teaspoon nutmeg
- ½ teaspoon cinnamon
- ¼ teaspoon allspice
- ¼ cup chopped chocolate chips (optional)
- 1 tablespoon each, sliced almonds and chopped dried cranberries for topping
Instructions
- Preheat oven to 350°F.
- Stir together the Honest Earth Sweet Potatoes, sugar, oil and egg. Set aside.
- In a separate bowl, mix together flour through chocolate chips.
- Add the sweet potato mixture and mix until well blended.
- Place batter into a loaf pan sprayed with pan release or divide mixture between two greased mini loaf pans.
- Sprinkle almonds and dried cranberries on top and bake for 40 minutes or until a toothpick inserted into loaf(s) comes out clean.
