Colcannon Mashed Potatoes

This traditional Irish dish takes on a new flavor with Idahoan Baby Reds® Flavored Mashed. Add kale or cabbage plus all the traditional fixings you like. And be sure to top with a generous dollop of butter. Enjoy!

INSTRUCTIONS

1. 1Prepare potatoes according to package directions.
2. 2Lightly sauté garlic in butter and oil.
3. 3Add kale or cabbage and cook until wilted.
4. 4Stir mixture along with drippings into the mashed potatoes.
5. 5Take the back of a large spoon and make an indentation into the potatoes. Top with a generous dollop of butter.
