For the purists out there, we have this recipe for sweet potatoes with a simple pecan topping. It’s sweet but not too sweet and adds a nice little crunchy. More about the marshmallows? We have that covered too here.

Sweet Potato Casserole with Nutty Crumb Topping
Serves: 2
 
Ingredients
  • ½ cup chopped pecans, divided
  • 1 pouch (9.9 oz) Honest Earth® Homestyle Sweet Potatoes
  • ¼ cup all-purpose flour
  • ¼ cup brown sugar
  • 2 Tbsp butter, melted
  • ⅛ tsp salt
Instructions
  1. Place oven rack in the upper one-third of the oven and preheat to 350°F.
  2. Blend ¼ cup of the pecans into the Honest Earth® Sweet Potatoes.
  3. Divide between two 1-cup ramekins sprayed with pan release.
  4. Mix remaining ingredients except the remaining pecans. Once combined, stir in the remaining ¼ cup of pecans and sprinkle topping on sweet potato casserole before baking.
  5. Bake for about 15 minutes or until heated through.
