INGREDIENTS

  • 1 - 4 oz package Idahoan® Loaded Baked® Mashed Potatoes
  • 2 jalapeño peppers, seeded and sliced
  • 4 flour tortillas
  • 1 cup cheddar cheese
  • 3 tsp oil, divided

Add another layer of ka pow to tortillas & cheese with this recipe for Bacon & Cheddar Chipotle Quesadillas and go from appetizer to main dish in a flash.

INSTRUCTIONS

  1. Prepare Idahoan® Loaded Baked® Mashed Potatoes according to package instructions. Keep warm.
  2. Sauté jalapeño slices in 1 tsp of oil in a skillet on medium high heat until softened.
  3. On a flat griddle, over medium heat, add 1 tsp oil and cook tortillas on both sides until lightly browned.
  4. Sprinkle two of the tortillas with ½ cup cheese each.
  5. Top with prepared Idahoan® Loaded Baked® Mashed.
  6. Sprinkle jalapeños on potatoes and top with the remaining flour tortilla.
  7. Place finished quesadillas on griddle to warm through and melt the cheese. Slice into quarters and serve.
