INGREDIENTS

  • 1 4.6-oz. package Idahoan® + Protein Buttery Homestyle Mashed Potatoes, prepared per
  • package directions
  • 1 12-oz. can solid white albacore tuna in water, drained
  • 3 large eggs, divided
  • 1 tablespoon chopped parsley
  • 1/2 teaspoon salt, plus more, to taste
  • 1/4 teaspoon pepper, plus more, to taste
  • 1 cup plain bread crumbs
  • 1 cup Greek yogurt
  • 1 lemon, juiced
  • 1 tablespoon chopped dill
  • 2 cloves garlic, finely grated

Air-Fryer Protein Tuna Cakes are delicious, crispy cakes made from our +PROTEIN Mashed Potatoes and albacore tuna.

INSTRUCTIONS

  1. In a large bowl, mix the prepared Idahoan® + Protein Buttery Homestyle Mashed Potatoes, tuna, 1 egg, parsley, salt and pepper together, breaking the tuna into large pieces until just combined. Form tuna mixture into 3/4-inch-thick patties.
  2. Beat the remaining eggs together in a small shallow bowl until combined. Place the bread crumbs in a separate shallow bowl. Dip the patties into egg and then into bread crumbs, making sure to evenly coat each patty. Coat both sides of each patty liberally with olive oil cooking spray.
  3. Preheat air-fryer to 400°F. Working in batches, place the patties in the air-fryer basket. Cook, flipping patties halfway through, until golden brown, about 10-12 minutes. Repeat with remaining patties.
  4. Meanwhile, in a small bowl, combine the yogurt, lemon, dill and garlic. Season with the salt and pepper, to taste.
  5. Serve the potato cakes with yogurt mixture and enjoy.
