INSTRUCTIONS

  1. Prepare the Idahoan Baby Reds Mashed Potatoes Cup according to the package instructions.
  2. Open, drain, and rinse the corn and beans and set aside.
  3. Dice 1 small Roma tomato and set aside.
  4. Dice cilantro and set aside.
  5. Scoop corn, beans and tomato on top of the mashed potatoes, then sprinkle with cheese.
  6. Garnish with cilantro.
  7. Enjoy!
